Mushroom and Goats Cheese Quiche
This dish is a bit of a classic pairing and a serious favourite of mine. The chunky mushrooms add some nice texture and really sing with the goats cheese combination! A mid-week banger using simple ingredients which you can easily add to or change depending on your veggies of choice!

Ingredients
1tbs Cobram Estate Extra Virgin Olive Oil
2 tbs butter
500g mixed mushrooms (button, flat, Swiss brown, portabello*), cut in large chunks
1 small red onion, diced
5 cloves garlic, sliced
3 sprigs thyme, leaves only
6 eggs
600ml cream
Sea salt and pepper, to taste
1 packet filo pastry (18-20 sheets)
125g butter, melted
160g goat cheese (Chevre)
2 sprigs thyme, leaves only
Notes
* The choice of mushroom is yours, you can mix it up like I did or just use one variety
* To test if quiche is set, give the tray a little shake, if the centre of the quiche is just wobbling then you should be good to go, if it is moving like liquid, it will need more time.
Method
Step 1. Preheat oven to 180C. Heat a large nonstick frying pan over medium high heat. Add butter, oil and mushrooms. Cook 2-3mins, add onions and cook for further 2-3mins. Finally add garlic and thyme, reduce heat and continue cooking until mushrooms are just tender. Remove from heat.
Step 2. Line a 40cm x 20cm baking tray with baking paper. Working one sheet at a time, layer in filo pastry, brushing each sheet with melted butter before adding the next. Ensure there is plenty of over hang at the edges of the pan, we will curl these up at the end to make a nice ruffled edge. Keep layering until the whole tray is covered and all pastry sheets are used.
Step 3. Whisk together eggs, add cream and whisk again to combine. Season with salt and pepper. Add mushrooms to filo lined baking tray, pour over cream and egg mixture and scatter dollops of goats cheese over top and garnish with thyme leaves.
Step 4. Bake for 25-30mins or until centre is just set*.
