Ingredients

1/3 cup Arborio, Sushi or a short grain rice
3 cup milk*
1/3 cup sugar
1 tsp vanilla paste
Zest, 1 orange (reserving some for garnish)
200g dark chocolate, cut into small pieces (reserving some for garnish)

NOTES

* It will seem like there is a lot of milk, but don't worry it will all come together.

Method

Step 1. In a large saucepan over medium heat add rice, milk*, sugar, vanilla and orange zest. Stir well and bring to a gentle simmer, reduce heat to low and cook stirring frequently for 20-35mins or until the rice is just tender and milk has absorbed / reduced.

Step 2. Add chocolate and gently stir through until melted and well combined. The rice should be nice and thick and rich and chocolatey now. Serve in warmed bowls and top with a zest of orange and shavings of dark chocolate.
