Smokey Hot Wings

A BBQ classic and a secret (not so secret) recipe of mine! Doing this recipe over the coals makes it what it is and adding the bush mint for that extra smoky touch really does it for me (if you don't have bush mint then pick woody herbs from the garden or grab some smoking chips from your BBQ store).

Ingredients

1kg chicken wings, jointed

 Spice Rub
⅓ cup smoked paprika
2 tbsp ground coriander
1 tbsp dried oregano
2 tsp onion powder
1 tsp garlic powder
½ tsp cayenne pepper (omit if you don’t like spice or if you love it, add some more!!)
1 tablespoon brown sugar
2 teaspoon sea salt

Finishing Sauce
250g block salted butter
1 x 150g bottle hot sauce (I used Frank’s Original Hot Sauce available from most supermarkets) 

Slaw
¼ wedge green cabbage, finely sliced
1 small fennel, finely sliced
½ bunch radish, finely sliced
½ bunch spring onions, finely sliced
2 tablespoons mayonnaise
½ medium lemon, juiced
Pinch salt and black pepper

Notes
* You can make up a large batch of the spice rub in advance and keep it stored in an airtight container for up to 1 month.
*This spice blend tastes great on roasted pork, a whole chicken or even roasted veggies.

 

Method

Step 1. Preheat a BBQ grill to medium high. We used our charcoal Go Anywhere Weber for that extra smoky flavour! Make the spice rub by adding all ingredients to a large bowl and mixing well to combine.

 Step 2. Add the jointed chicken wings to the bowl with the spice rub and toss to coat evenly in the spice blend.

Step 3. Place the coated chicken wings straight onto the hot BBQ grill plate. Cook for 5 minutes on each side (closing the lid when not flipping), until cooked through.

 Step 4. While the wings are cooking, make the Hot Sauce. Place the butter and the hot sauce into a small saucepan and over medium heat. Cook, stirring, until melted and well combined.

 Step 5. To make the slaw, add the finely sliced cabbage, fennel, radish, and spring onions to a large mixing bowl. Toss to combine. In a small bowl, add the mayonnaise, lemon juice and a pinch of salt and pepper, mix well to combine. Pour the dressing over the slaw and toss gently to coat the slaw in the dressing.

 Step 6.  Place the BBQed chicken wings into a fresh large mixing bowl. Pour over the hot sauce, adding a little at a time, and tossing to coat the BBQed wings in the hot sauce until well coated and really saucy.

 Step 7. Serve the Smokey Hot Wings with a side of the fresh slaw. Place into the middle of the table for everyone to serve themselves.
